It was 5:00, and I stood looking in my freezer trying to figure out what the heck I was going to fix for dinner. I found some barbacoa, and thought I would make some enchiladas with it, but didn’t have a can of enchilada sauce. I found this recipe, and it was super easy. I’m sure I’ll never buy the canned stuff again.
- 1/4 cup butter
- 1/4 cup chili powder
- 2 tablespoons flour
- 1 1/2 cups water
- 1 can tomato sauce (or about 1 3/4 cup homemade)
- 1/4 tsp cumin
- 1/4 tsp onion powder
- 1/4 tsp garlic salt (or powder and then add a little salt to the mix)
Over medium heat, melt butter. Stir in flour and chili powder and stir for about 2-3 minutes, until thickened and well combined. Slowly stir in remaining ingredients. Cook over medium low heat, stirring occasionally until thickened (about 10 minutes).
