Zucchini Bread

This is my Grandma’s recipe–and my all time favorite zucchini bread. I love that it always makes me think of my Grandma and her fabulous baking skills.

Remember to not overmix the batter once the flour has been added to the mixture.

  • 1 cup butter
  • 1 cup sugar
  • 2 tsp vanilla
  • 3 eggs
  • 3 cups grated zucchini
  • 1 cups whole wheat flour
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp soda
  • 1/4 tsp baking powder
  • 3 tsp cinnamon

Cream together butter and sugar. Add eggs one at a time, beating afer each addition. Add zucchini and vanilla. Mix together dry ingredients and add to zucchini mixture.

Pour batter into greased loaf pan (if you put a piece of wax paper on the bottom of the pan it makes removal very easy!). Bake 1 hour 15 minutes at 350 degrees. If you want to make muffins, bake about 12-15 minutes for mini muffins and about 20-25 minutes for regular sized muffins.

Let bread cool for about 10 minutes and then remove it from the pan.

  1. While this looks lovely (and is such a nice tribute to your Granmda!), I want the chocolate zucchini bread recipe that you made for the small group BBQ! My girls are asking for it–best zucchini bread recipe ev.ah. 🙂
