Cooking with Kids–Applesauce Muffins

My sweet friends came to visit yesterday…and for a day I had lots of kids running around here. Fortunately one of mine was at school, so I only had four to entertain. Guess what we did? We cooked! I know–shocking, right? Cameron (10) made up a muffin recipe (with a little of my help) and we baked away. They turned out great…here’s her recipe debut! Have comments, suggestions? I’m sure she’d love to hear them. Have any recipes your kids have created?

  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup applesauce
  • 1 medium apple, peeled and shredded
  • 1 cup milk
  • 1 3/4 cup flour
  • 1 cup oatmeal
  • 1 1/4 tsp soda
  • 1/2 tsp salt

Cream together the butter and sugars. Add the egg. Stir in the applesauce, apple and milk. In a separate bowl, mix together the flour, oatmeal, soda and salt. Add dry ingredients to the apple mixture and stir together. Bake at 350 for 18 minutes.
