This recipe brings back years of holiday memories for me. My mom makes it for breakfast at every family get-together. I’m sure I’ll be making it for years to come as well.
- 1/2 cup butter
- 1/2 cup flour
- 6 eggs, beaten
- 2 cups cheese, shredded (monterey jack, pepperjack, cheddar, swiss, whatever you like or have)
- 2 cups cottage cheese
- 3 ounces cream cheese, softened
- 1 cup milk
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp sugar
In a small saucepan, melt the butter. Add the flour and stir until smooth.
To the flour butter mixture, add remaining ingredients. Stir until well blended.
Pour into greased 9×13 baking dish. Bake uncovered at 350 degrees for 45 minutes.
