Tex Mex Chicken Salad

Mmmm…this is easy and good.

  • 2 chicken breasts, cooked and diced
  • 3 tablespoons mayo
  • 1 tsp vinegar (rice, plain, white wine…something light)
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 cup red bell peppers, finely diced
  • 1 celery rib, finely diced
  • 1 cup corn kernels (fresh, removed from the cob is the best)
  • 1 small avocado, diced
  • salt
  • pepper

Stir together all ingredients and serve with crackers.
