Mmmm…this is easy and good.
- 2 chicken breasts, cooked and diced
- 3 tablespoons mayo
- 1 tsp vinegar (rice, plain, white wine…something light)
- 2 tablespoons fresh cilantro, chopped
- 1/4 cup red bell peppers, finely diced
- 1 celery rib, finely diced
- 1 cup corn kernels (fresh, removed from the cob is the best)
- 1 small avocado, diced
Stir together all ingredients and serve with crackers.
