This is a great freezer recipe. Put all the ingredients in a large plastic bag, freeze it, and then plop it in the crock pot when you are ready to cook it. Easy! I usually write the name of the recipe on the bag, and what ingredients need to be added (like the 2 cans of tomatoes, for example).
- 1 1/2 to 2 pounds boneless chicken
- 2 cans (about 28 ounces) tomatoes, diced
- 1-2 cups artichoke hearts, chopped
- 1-2 cups chicken broth
- 1 medium onion, chopped
- 8-12 ounces kalamata olives, sliced
- 2 teaspoons curry powder
- 3/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Place all ingredients in a slow cooker. Cook on low for 6-8 hours, or on high for 4-5.
Serve over pasta, quinoa, or rice.
