Lindsey’s Chicken

This is super yummy. Thanks to my sister in law, Lindsey, for this great, CSA friendly recipe! Again, this is easy to prepare ahead. Put all ingredients (except cream cheese) in a large gallon ziplock, freeze until you are ready to use, and then place contents of bag in the crock pot.

  • 1-2 pounds chicken
  • 2 bell peppers, diced
  • 2-3 cans tomatoes, diced
  • 1 can corn
  • 1 onion, diced
  • 1 can green chiles
  • 1 jalepeno, diced
  • 1 (or 1 1/2) tablespoon cumin
  • 2 tablespoons chili powder
  • 1-2 tsp coriander
  • 8 ounces cream cheese

Place all ingredients except cream cheese in a crock pot. Cook on high 5-6 hours or on low 4-5 hours. Once it is done, the chicken will fall apart easily. Shred chicken and stir in cream cheese. Serve over rice.
