Banana Breakfast Cookies

I have an abundance of bananas, and this was a good find! From the original recipe, I reduced the sugar from 3/4 cup to 1/4 cup and reduced the chocolate chips from 1 cup to 1/2 cup. They aren’t too sweet that way…and a great breakfast or snack.


  • 1 cups whole wheat flour
  • 1 cup flour
  • 2 cups old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large ripe banana, mashed
  • 2 large eggs
  • 1/4 cup brown sugar
  • 2 tablespoons coconut oil, melted
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet, milk, white or dark chocolate chips


  1. Preheat oven to 350F.
  2. In a large bowl, combine flour, oats, baking soda, baking powder, cinnamon, and salt until combined. In a separate large bowl, whisk mashed banana, egg, sugar, oil, milk, and vanilla until smooth.
  3. Stir dry ingredients into liquid until mixture forms a dough. Stir in chocolate chips.
  4. Shape dough into 2-in balls and place on baking sheet. Flatten each ball slightly. Bake cookies at 350F 9-10 minutes or until edges start to turn golden.
  5. Cool cookies on baking sheet 5 minutes before transferring to a wire cooling rack.
