Pecan Pie Muffins

  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla
  • 2/3 cup coconut oil
  • 2 cups pecans, finely chopped
  • 1/2 cup flour

 

Preheat oven to 350.

In a large bowl, combine eggs, salt, brown sugar, mashed banana, vanilla and coconut oil until well mixed. Stir in pecans and flour.

Pour batter into generously greased muffin tins, filling all the way to the top. Bake 15-18 minutes. Makes 10 regular sized muffins.
